
A big pot of hearty Italian vegetable soup — loaded with seasonal veg, beans, and pasta. Feeds the whole family for very little.

Heat olive oil in a large pot. Sauté onion, garlic, carrot, and celery for 5 minutes.
Add zucchini, tomatoes, beans, and stock. Bring to the boil.
Reduce heat and simmer for 20 minutes.
Add pasta and cook for a further 10 minutes until tender.
Season well, stir in fresh basil, and serve with crusty bread.
