Heat oil in a large pot over high heat. Brown beef in batches — don't overcrowd the pan. Set aside.
Sauté onion and garlic for 3 minutes. Add carrots and cook a further 2 minutes.
Return beef. Add stock, tomatoes, thyme, and bay leaves. Bring to the boil.
Reduce to a low simmer, cover, and cook for 1 hour.
Add potatoes and mushrooms. Cook uncovered for 30 more minutes until beef is tender and sauce has thickened. Season well. Serve with crusty bread.
